If I had one simple dream when it came to being a stay at home mom, it’d be to have a chef. Someone who prepares breakfast, lunch and dinner regularly so I don’t have to. My family and I have grown a bit tired of the same meals or undercooked meals (side eye) that I make. Hey, my mom never taught me to cook, lets blame her.

It’s a constant struggle trying to spice things up in the kitchen. Of course, my eyes instantly go to Pinterest where I always find something fantastic, delicious and easy. I like recipes that are for the most part simple, I can’t imagine frying, baking, cutting, sautéing for hours and I’ve had success. When I share the end result on my Youtube channel or Instagram stories I’m always getting questions and comments on them. I decided to make a board “Dinners I’ve Made & Liked”.

I wanted to share my easy dinner meals with you all and most importantly share one specific dinner that will blow your mind because I never in a million years would’ve thought of it. Hint: deals with sweet potatoes and tacos! I know a crazy combination, it doesn’t make sense. I love tacos and I love sweet potatoes so that peaked my interest.

Thank you to Paleo Running Momma for this BEYOND amazing dish. There are a couple things I changed from her recipe such as using ground turkey instead of beef and then I opted out of the chipotle ranch. If that’s something you want to add then check out her post for those directions and ingredients.


Sliders:
1-2 med/large FAT sweet potatoes scrubbed and sliced into 1/2” thick rounds (you’ll need 10 rounds total)
avocado or olive oil plus salt for roasting
1 1/4-1 1/2 lbs ground turkey
2 tsp taco seasoning
1/8-1/4 tsp chipotle powder more if you like spice! (OPTIONAL)
1 fresh jalapeño minced (OPTIONAL, I opted out of this)
2 cloves garlic minced (I used powder)
1/2 tsp fine grain sea salt
Onions (I love onions so I cut up half an onion and minced)

Guacamole:
2 med/large ripe avocados
1/4 cup red onion minced
2 clove garlic minced
1 fresh jalapeño pepper minced (OPTIONAL)
2 Tbsp fresh lime juice
1/4 cup chopped fresh cilantro plus more for garnish (OPTIONAL)
Sea salt to taste
3 slices nitrate free bacon sugar free for Whole30, cooked and crumbled (OPTIONAL, I didn’t have bacon so I didn’t add it)


Instructions
1- Preheat your oven to 425 degrees and line a large baking sheet with parchment paper.
Sliders

2- Brush a small amount of the oil on both sides of each sweet potato round and arrange on baking sheet spread apart. Roast for 15 minutes in the preheated oven, flip each one, then continue to roast another 10-15 mins or until soft and beginning to brown.

3-Meanwhile, combine the ground beef, taco seasoning, chipotle powder, minced jalapeño, garlic, and salt in a mixing bowl. Form mixture into 10 small patties

4- Heat a large skillet over medium high heat and brush with a bit of cooking fat. You can also grill the patties following the same instructions.

5-Once skillet is sizzling hot, add patties and fry about 3-5 minutes on each side until desired doneness is achieved. Remove to a plate and cover with aluminum foil to keep warm.

Guacomole and Chipotle Ranch:
Either prior to beginning or before serving, combine all guacamole ingredients and mash with a fork to combine well.

Lastly, assemble them as you see in the picture! Add whichever kind of sauce you like, I add Cholula Sauce “Chili Garlic”.
